    Where and What to Eat in Nanjing

    Also known as Jiang Su cuisine, Nanjing cuisine is famous for its unique flavours and careful selection of raw ingredients. Following culinary tradition, Nanjing dishes even today use a liberal amount of oil and restricted seasonings. Most surprisingly, you will find duck a lot more popular than pork and beef on a Nanjing restaurant menu. Freshwater fish and large shrimp are also used and a few other popular ingredients used for preparing various dishes include mushrooms, dates, bamboo shoots, melon and pears either boiled, braised or roasted.

    However, the most popular Nanjing cuisine is the Yanshui ya or salted duck. Another extremely tasty and rare dish is the ‘eight delicacies soup’. It is carefully made with lotus seeds, arrowroot, parsley, lotus roots, water chestnuts, and fish. This preparation is mainly eaten during the Autumn Festival.

    Nanjing restaurants serve up a collection of regional Chinese, local and foreign cuisines, and are a lot more reasonable in their prices when compared to neighboring Shanghai.
